Cabbage Casserole



Here is what I made for dinner last night! We went to New Orleans last weekend for the St. Patrick's Day Parade. Had a blast!! And we caught some food! Yes, one of the GREAT things about coming to this parade is that you can get cabbage, carrots, potatoes, garlic, lemons, and oranges. You might end up with food for a month if you get lucky! We ended up landing 3 cabbages and some other things, so I had to find something easy to cook.


Yesterday I decided to look up recipes and found this... http://www.food.com/recipe/comforting-cabbage-and-sausage-casserole-413547 Talk about easy. I stopped on the way home and got some Italian sausage, and sour cream. I had the cabbage and cheese. It did not take long to cook and it was very tasty. I did add a little Tony Chachere's. My hubby liked it too! Don't worry about the nutrition information too much. I used a whole small cabbage (prob more like 8 cups chopped), and served it over cooked brown rice. We each had serving, and there were leftovers for lunch. So, I don't think it was a 900 calorie meal. It was very tasty though and next time I might try ground chicken instead of sausage. I know it would be healthier then.
